I doubt it will be a game, there are already so many. An online encyclopedia would be kind of redundant, because Harry Potter already has a wiki :)

A prequal TV series/miniseries would be awesome :D Or a televised version of Quiddicth, with a tournament and an eventual Quidditch world cup :D OR a Harry Potter anime >:)
