My answer is, that Edward my have not fallen in Amore with Bella if he could read her mind because, he may have taken offence to what she was thinking about him and whatnot.

I think he fell in Amore with her and became so interested in her, was because of that fact the he could not read her mind.
I believe that's why he wanted to become so involved with her and became so interested in her and what she had to say.

I certainly wouldn't. her thoughts are annoying as hell... being inside Bella's head is what makes Twilight etc. unenjoyable for me.
