I know it would make the whole story really boring but I think if it was a real situation then it would make more sense and be a lot less risky

I've seen that asked somewhere before, and someone else answered that the eagles would be too attention grabbing. The whole idea was sneaking into Mordor.

And of course that wouldn't make much of a story.
